Baked Salmon with Lemon Aioli

Ingredients

  • 4 salmon fillets
  • 1-2 tablespoons avocado oil
  • Salt and pepper

Directions

Heat oven to 400°F. Blot salmon fillets on both sides with paper towels to dry. Place the salmon skin-side down on a greased baking sheet. Brush the top and sides of the salmon with avocado oil. Sprinkle with salt and pepper. Bake until the internal temperature reaches 135-140°F, about 4-6 minutes per half-inch of thickness of the fillet. Top with lemon aioli.


Lemon Aioli Ingredients

  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard

Directions

Place all ingredients in a small bowl and stir until creamy.
