Lemony Quinoa One-Skillet Chicken
Ingredients
- 1 package chicken thighs
- 1 tablespoon olive oil
- 2-3 cloves garlic, minced
- 1 tablespoon butter
- 1 cup quinoa, rinsed
- 2 cups stock or broth
- 2 tablespoons capers
- 1 lemon, zested and ½ juiced
- 2 teaspoons Greek seasoning
- 1-2 stalks kale, shredded
- 1-2 tablespoons basil
- Parmesan cheese to taste
Directions
Salt and pepper chicken. Add olive oil and garlic to skillet and cook for about 1-2 minutes. Add chicken and brown on both sides. Remove from skillet and set aside. Add butter to pan and cook until melted. Add quinoa and cook for one minute. Add broth and return chicken to pan. Top with capers, lemon zest and juice, and Greek seasoning. Cook for 10 minutes. Flip chicken and cook for an additional 10-15 minutes until liquid is absorbed. Add kale and cook for 1-2 minutes. Garnish with basil and Parmesan cheese.
