Crock Pot Mondays – Spinach, Red Pepper, and Artichoke Chicken
Meal kits will be preassembled. No need to bring your slow cooker. Registration fee is $15. Please RSVP by the Monday prior to the event.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- Salt and pepper to taste
- 16 ounces cream cheese, softened
- 9 ounces frozen spinach, thawed and drained well
- 14.5-ounce can of artichoke hearts, drained and chopped
- 12 ounces canned fire-roasted tomatoes
- 8 ounces roasted red peppers, sliced
- 1 tablespoon fresh garlic, chopped
- 2 cups mozzarella, shredded
- 1 teaspoon crushed red pepper flakes
Directions
- Place the chicken in the bottom of a six-quart slow cooker. Sprinkle with salt and fresh-ground black pepper.
- In a bowl, mix cream cheese, spinach, artichokes, tomatoes, red peppers, garlic, mozzarella, and crushed red peppers. Pour over chicken and spread evenly.
- Cook on low for 5-6 hours or until chicken reaches an internal temperature of 165 degrees on a food thermometer.
Participants must provide 24-hour notice in the event of meal cancellation and will be reimbursed accordingly. Participants are responsible for picking up meals during designated times and locations. SMSC Health and Wellness is not responsible for refunding meals that are not picked up.
