Crock Pot Mondays – Mushroom-Sauced Bison Tips

Meal kits will be preassembled. No need to bring your slow cooker. Registration fee is $20. Please RSVP by the Monday prior to the event.
Mushroom-Sauced Bison Tips (Dairy- and Gluten-Optional)
Ingredients
1 1/2 pounds bison stew meat, cubed or sliced
1 tablespoon fresh rosemary, finely minced
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons butter
2 tablespoons flour
3 cups beef stock
1 cup mushrooms, sliced
1 medium onion, chopped
Directions
- Season the bison meat with the rosemary, salt, and pepper.
- Place stew meat at the bottom of a large slow cooker.
- Preheat a small saucepan on the stove. Add the butter and melt completely, then add the flour to make a roux. Cook over medium heat, stirring occasionally for 2-3 minutes, or until the flour is lightly browned. Once the mixture has lightly browned, add the stock to the saucepan slowly, stirring constantly to avoid lumps. Bring to a boil over medium heat, then turn off heat.
- Place mushrooms and onions on top of the bison stew meat; pour the sauce on top.
- Cook on high for 4-5 hours, or on low for 7-8 hours, until the bison is tender.
Participants must provide 24-hour notice in the event of meal cancellation and will be reimbursed accordingly. Participants are responsible for picking up meals during designated times and locations. SMSC Health and Wellness is not responsible for refunding meals that are not picked up.
