Crock Pot Mondays – Thai Beef in Peanut Sauce
Meal kits will be preassembled. No need to bring your slow cooker. Registration fee is $20. Please RSVP by the Monday prior to the event.
Thai Beef in Peanut Sauce
Ingredients:
2 pounds beef stew meat, cubed
3/4 cup natural peanut butter
1 14-ounce can of coconut cream
1 tablespoon red curry paste
3 tablespoons soy sauce
3 tablespoons brown sugar
1 tablespoon fish sauce
2 tablespoons apple cider vinegar
6 cups spinach
6 cups cooked rice
Fresh basil, optional
Crushed peanuts, optional
Chili flakes or peppers, optional
Directions:
- Place beef stew meat in a large slow cooker.
- In a small bowl, whisk together peanut butter, coconut cream, red curry paste, soy sauce, brown sugar, fish sauce, and apple cider vinegar until well combined. Pour the mixture into the slow cooker over beef stew meat.
- Cook on low for 5-6 hours or until beef is cooked through and fork tender.
- Fifteen minutes before serving, add the spinach to the slow cooker, allowing it to wilt.
- Serve over rice and top with fresh basil, crushed peanuts, and/or chili flakes, if desired.
Participants must provide 24-hour notice in the event of meal cancellation and will be reimbursed accordingly. Participants are responsible for picking up meals during designated times and locations. SMSC Health and Wellness is not responsible for refunding meals that are not picked up.
